Pork chops were baked at 350* for 30 minutes, then topped with pesto sauce. Tomatoes were sliced and then marinated in olive oil, basil, and salt while the pork chops cooked. Sweet potato was sliced into thick chips and fried in a tiny bit of oil for a couple of minutes on each side.
Sandwich was made with a whole wheat bread with high fiber, and slightly lower carbs than most brands (nature's own is featured above). Consists of cream cheese, cucumber, tomato, turkey, capers, and red cabbage sauerkraut.
Salad made with: Cucumbers, tomato, radish, onion, romaine, goat feta, and homemade dressing. Dressing is red wine vinegar, olive oil, italian spices, and garlic: blended.
Half egg white, half regular egg omelett stuffed with turkey bacon, tomato, spinach and red onion. topped with cheddar cheese (reduced fat).
We're human, most nights we don't feel like making some big imaginative meal, but it doesn't have to be fast food or pizza either.
